What each ingredient does

Apples
Provide body and natural pectin, giving the sorbet a smooth, thick base.
Sugar
Adds sweetness and lowers the freezing point, keeping the sorbet soft rather than rock-hard.
Lemon juice
Adds acidity that brightens the flavor and balances the sugar.
Orange juice
Contributes sweet-tart citrus flavor and extra liquid for the base.

The step that matters

Freeze only until mushy. Sugar and fruit solids lower the freezing point, so the mixture stays partly liquid. Freezing it solid makes the sorbet icy and hard, so it should be checked before it sets fully.

Swap the apple

How well each one fits the dish's main ingredients (lemon, grapefruit, orange, sugar):

  1. Limefits better
  2. Vanillafits better
  3. Mangofits better
  4. Applethe original

Fit is the average pairing score against lemon, grapefruit, orange, sugar. Candidates are from the same food group and used in at least 100 recipes.
