Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bananas
Provide the main flavor and a smooth, thick body when pureed into the custard.
Egg yolks
Thicken the custard and give it a rich texture as they set with gentle heat.
Milk
Forms the liquid base of the custard and carries the banana flavor.
Sugar
Adds sweetness and balances the flavor of the bananas and lemon or vanilla.

The step that matters

Cooking the custard over hot water. Egg yolks thicken as their proteins set with heat, but too much heat or too little stirring can curdle them. Stir constantly and stop when the custard coats the back of a spoon.

Swap the banana

How well each one fits the dish's main ingredients (milk, egg, sugar, lemon):

  1. Vanillafits better
  2. Orangefits better
  3. Figfits better
  4. Bananathe original

Fit is the average pairing score against milk, egg, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
