Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. In a bowl, mix the hot apple sauce with nutmeg, cinnamon, lemon juice, and grated lemon rind.

  3. Add butter and beaten egg yolks, then beat until light.

  4. Gradually add granulated sugar while continuing to beat.

Bake and top

  1. Transfer the mixture to a covered baking dish and bake for 10 minutes.

  2. Remove from the oven and top with meringue made from egg whites and powdered sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apple sauce
Provides the main body and moisture of the filling.
Egg yolks
Enrich and thicken the filling as they set during baking.
Egg whites
Whipped into the meringue topping, giving it volume and structure.
Granulated sugar
Sweetens the filling and helps stabilize the beaten yolks.
Butter
Adds fat and richness, contributing to a smooth, tender texture.
Lemon juice
Adds acidity that brightens the flavor of the apple sauce.

The step that matters

Beat in the sugar gradually. Adding granulated sugar slowly while beating helps it dissolve and keeps the mixture smooth, so the egg yolks blend in evenly rather than becoming grainy or separating.
