Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the pudding as it absorbs milk and softens during baking.
Milk
Provides the liquid that the rice absorbs and that thickens into a creamy custard.
Sugar
Adds sweetness and helps the top brown during baking.
Nutmeg
Adds a warm aroma that complements the milk and sugar.

The step that matters

Stirring during the first half hour. Stirring early keeps the rice from settling and sticking to the bottom while it starts to absorb the milk, so the texture stays even.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Turmericfits less well

Fit is the average pairing score against rice, milk, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
