Crumb Pudding

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Boil the bread-crumbs with the milk.

  2. Add the sugar and vanilla; stir until smooth and thick.

  3. Beat the yolks of the eggs and mix them in.

  4. Butter a tart dish and pour in the mixture.

  5. Bake slowly at 300°F (150°C) for 45 minutes.

Top and finish

  1. Spread a layer of strawberry jam over the top.

  2. Beat the egg whites until stiff, then gently stir in the sugar.

  3. Pile the egg whites over the pudding.

  4. Dip a knife in boiling water and smooth the egg whites.

  5. Return the pudding to the oven and bake until golden-brown.

  6. Serve at once.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread-crumbs
Thicken the milk into a soft, set custard base.
Eggs
Enrich the custard and set it, while the whites are whipped to form a light meringue topping.
Sugar
Sweetens the custard and helps the beaten egg whites hold their stiff structure.
Milk
Forms the liquid base that the bread-crumbs soften and thicken.

The step that matters

Smooth and brown the egg whites. Stiffly beaten whites are delicate and can deflate or weep if handled roughly. Gentle folding keeps the air in, and a slow oven lets the meringue brown without drying or cooking the custard beneath too fast.

Swap the strawberry jam

How well each one fits the dish's main ingredients (bread, milk, sugar, vanilla, egg):

  1. Figfits better
  2. Peachfits better
  3. Apricotfits better
  4. Strawberry jamthe original

Fit is the average pairing score against bread, milk, sugar, vanilla, egg. Candidates are from the same food group and used in at least 100 recipes.
