Why it works: Orange and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 10,634 recipes mention both. Both carry 3-hexenal, which smells apple, fruity. The science ↓

Fine Orange Jelly

Ingredients

Directions

Make the jelly

  1. When the syrup is nearly cold, add the orange and lemon rinds and the orange and lemon juices.

  2. Once cold, stir in the isinglass and strain through a piece of muslin folded in four.

What each ingredient does

Isinglass
Sets the liquid into a firm jelly as it cools.
Orange juice
Provides the main flavour and liquid body of the jelly.
Lemon juice
Adds acidity that brightens the orange flavour.
Orange rind
Contributes aromatic oils that scent the jelly.
Lemon rind
Contributes aromatic oils that add a sharper citrus note.

The step that matters

Strain through muslin once cold, before adding isinglass. Isinglass must be stirred in only once the mixture is cold, so it sets rather than being weakened by heat. Straining through muslin removes rind and pulp so the jelly is clear and smooth.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (orange, syrup):

  1. Lemonthe original
  2. Vanillaabout as good a flavor fit

Fit is the average pairing score against orange, syrup. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
