Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Forms the gel structure that lets the cream set firm and hold its shape.
Heavy cream
Adds fat for a rich, smooth, velvety texture in the set dessert.
Milk
Adds creaminess and body while softening the coffee's bitterness.
Strong coffee
Provides the main coffee flavor and aroma.

The step that matters

Boiling the sweetened mixture for 10 minutes. Prolonged boiling can weaken gelatin's setting power and can scorch the milk on the bottom of the pan. Stir steadily and keep the heat controlled so the gel sets properly later.
