Ingredients

Directions

The book says “a very slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the paste

  1. Mix ground sweet and bitter almonds with powdered sugar and white biscuit powder.

  2. Add essence of vanilla and egg whites to form a stiff paste.

  3. Roll out the paste to about ½ inch thick.

Shape and ice

  1. Cut the rolled paste into strips 3 inches wide.

  2. Icing the strips with pink and white icing.

  3. Cut the iced strips into fingers 1 inch wide.

Bake and decorate

  1. Bake in a very slow oven at 300°F (150°C).

  2. Optionally, decorate with diamond-shaped pieces of angelica.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground sweet almonds
Provide the main body and nutty flavour of the paste.
Powdered sugar
Adds sweetness and helps the paste hold together as it dries.
White biscuit powder
Adds starch and fine structure, giving the cake a tender crumb.
Egg whites
Bind the almond mixture into a stiff paste and lighten its texture.

The step that matters

Bake in a very slow oven. A low, steady oven dries the paste and sets it without browning the almonds or sugar too quickly. Too hot an oven can scorch the surface before the inside sets.

Swap the vanilla

How well each one fits the dish's main ingredients (almond, sugar, biscuit, egg):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Blueberryfits less well

Fit is the average pairing score against almond, sugar, biscuit, egg. Candidates are from the same food group and used in at least 100 recipes.
