Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

Bake

  1. Pour the batter into a prepared cake pan.

  2. Bake at 350°F (175°C) until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving the cake a light, tender crumb and rich flavor.
Eggs
Add structure and richness as they set, and help hold air from the creaming step.
Flour
Forms the structure of the cake as its proteins set during baking.
Sugar
Creams with butter to aerate the batter and adds sweetness and browning.

The step that matters

Creaming the butter and sugar. Beating butter and sugar together until light traps air bubbles that expand in the oven and lighten the crumb. Under-creaming leaves a dense cake.

Swap the clove

How well each one fits the dish's main ingredients (butter, sugar, flour, egg, nutmeg, wine):

  1. Cinnamonfits better
  2. Cardamomfits about as well
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against butter, sugar, flour, egg, nutmeg, wine. Candidates are from the same food group and used in at least 100 recipes.
