Croquettes D’huitres

Ingredients

Directions

Prepare the filling

  1. Prepare the oysters by removing the shells and cutting them into small pieces.

  2. Add diced mushrooms to the oysters in a bowl.

  3. In a saucepan, reduce the béchamel sauce, stirring and adding oyster cooking liquid and cream. Once the sauce is creamy, mix in the egg yolks and finish with butter.

  4. Combine the oyster mixture with the sauce and let it cool in a terrine on ice.

Shape and fry

  1. Divide the mixture into equal parts and shape them like plums.

  2. Dip each croquette in beaten eggs, then coat with breadcrumbs.

  3. Fry the croquettes in hot oil, a few at a time, until golden brown.

  4. Drain on a cloth and garnish with fried parsley.

What each ingredient does

Oysters
Provide the main flavour and the soft, tender filling of the croquette.
Béchamel sauce
Binds the filling together and gives it a creamy, moist texture.
Egg yolks
Enrich the sauce and add richness and body to the filling.
Mushrooms
Add moisture and earthy flavour to the oyster filling.
Breadcrumbs
Form a crisp, golden browned crust when fried.

The step that matters

Cooling the mixture on ice. A well-chilled filling is firm enough to shape without slumping and to hold its form in hot oil. Cooling it fully before shaping prevents the croquettes from bursting or falling apart while frying.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, mushroom, sauce, cream, egg, butter, truffle):

  1. Nutmegfits better
  2. Capersfits better
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against oyster, mushroom, sauce, cream, egg, butter, truffle. Candidates are from the same food group and used in at least 100 recipes.
