Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Whipped cream
- Gives the dessert an airy, light body and a rich, smooth texture.
- Isinglass
- Sets the mixture into a firm structure as it cools.
- Sugar
- Adds sweetness to the cream.
- Lemon peel
- Adds bright, fragrant lemon aroma and flavor.
The step that matters
Adding the dissolved isinglass to the cream. Isinglass sets as it cools, so it must be fully dissolved and still liquid when it is beaten into the cream. If it cools or stiffens first, it forms lumps or strands instead of blending smoothly, and the dessert will not set evenly.
