What each ingredient does

Oatmeal
Forms the body of the porridge as its starch thickens into a creamy mass while simmering.

The step that matters

Boil for 30 minutes, stirring occasionally. Oats need sustained simmering for their starch to gelatinize and thicken the liquid. Occasional stirring prevents scorching on the bottom of the pot and keeps the texture even.
