Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks and beaten whites add richness and help the cake rise and hold its structure.
Flour
Provides the structure that sets as the cake bakes.
Butter
Creamed with sugar, it traps air and adds tenderness and fat for a moist crumb.
Sugar
Sweetens the cake and helps create a tender texture when creamed with butter.
Milk
Adds moisture and liquid so the flour can hydrate and form the batter.
Lemon
Juice adds acidity and bright flavour, while the grated rind adds aroma.

The step that matters

Creaming the sugar and butter. Beating them together traps air in the fat, which helps lighten the batter and gives the cake a tender crumb. Under-creaming leaves a dense texture.
