Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil the rice in water until perfectly soft.

  2. Add the butter and sugar to the rice and mix well.

  3. Beat the eggs and stir them into the mixture.

  4. Grate the nutmeg and add it along with wine to taste.

Bake

  1. Pour the mixture into a baking dish and bake at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Forms the body of the pudding and absorbs the liquids as it cooks.
Butter
Adds richness and a softer, smoother texture to the pudding.
Sugar
Adds sweetness and helps the pudding brown lightly at the edges.
Eggs
Set when baked, binding the pudding into a firm, sliceable custard.

The step that matters

Bake until set. Eggs thicken as their proteins coagulate with heat. Removing the pudding too early leaves it runny, while overbaking can make it dry and grainy.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, butter, sugar, egg, wine):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Tarragonfits less well
  4. Gingerfits less well

Fit is the average pairing score against rice, butter, sugar, egg, wine. Candidates are from the same food group and used in at least 100 recipes.
