Fry and serve

  1. Heat lard in a pan until it is perfectly boiling.

  2. Place a thick slice of raw apple in the lard, then add spoonfuls of the batter.

What each ingredient does

Eggs
Beaten to a light foam, they give the batter structure and lift as they set in hot lard.
All-purpose flour
Forms the body of the batter, which sets around the apple and holds the fritter together.
Apples
Chopped apple thickens the batter and adds moisture and tart flavour to the fritter.
Lemon
Rind and juice add bright, acidic aroma that balances the sweetness of the apples.
Lard
Frying fat that transfers heat quickly, browning the outside and crisping the surface.

The step that matters

Fry without turning. The lard must be at a full boil before the batter goes in, so the outside sets quickly. Turning too early can break the delicate crust and leave the fritter greasy or misshapen.
