What each ingredient does

Hard-boiled egg yolks
Provide the fat and richness, giving the balls a smooth, creamy texture.
Raw egg white
Adds moisture and binding so the sieved yolk mixture holds together when shaped.

The step that matters

Gradually stir in the raw egg white. Sieved yolk is crumbly and dry, so the white is needed to bind it. Adding it all at once can make the mixture wet and soft, so it will not hold its shape. Add it slowly and stop once the mixture can be formed into balls.
