Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl tapioca
Starch that thickens as it cooks and turns the mixture clear and gelled.
Granulated sugar
Adds sweetness and helps balance the tart lemon juice.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
Sliced peaches
Provide fruit flavor and soft texture folded into the set tapioca.

The step that matters

Cooking until clear. Tapioca starch must be cooked long enough to fully gelatinize; undercooked pearls stay opaque and chalky, while the thickened mixture sets as it cools.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, peach):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, peach. Candidates are from the same food group and used in at least 100 recipes.
