Boiled Potatoes

Ingredients

Directions

  1. Scrub the potatoes and place them in a saucepan.

  2. Pour enough boiling water to cover the potatoes by 1 inch.

  3. Bring to a boil, then simmer until easily pierced with a fork.

  4. Drain the potatoes and shake gently over the heat to dry.

  5. Remove a half-inch strip of skin around the center of each potato, or peel them entirely.

  6. Serve hot. If using for warmed-over dishes, remove skins after cooling.
