Ingredients

Directions

Prepare the potatoes

  1. Cook the potatoes without their skins until tender.

  2. Drain thoroughly and shake over the heat until dry and mealy.

  3. Mash the potatoes until very smooth using a potato masher or ricer.

Mix and serve

  1. Heat the cream or milk and add it slowly to the potatoes while beating constantly.

  2. Stir in the salt and mix well.

  3. Transfer the mashed potatoes to a heated dish.

  4. Make indentations on top with the back of a tablespoon and drop a bit of butter into each.

  5. Sprinkle the pepper lightly over the top and place in the oven for a moment until the butter melts.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the main body of the dish and absorb the cream and butter when mashed smooth.
Butter
Adds richness and fat, carrying flavour and giving a smooth mouthfeel.
Cream or milk
Adds moisture and creaminess, loosening the mash into a smooth texture.
Salt
Seasons the potatoes and brings out their natural flavour.

The step that matters

Adding the cream or milk slowly while beating. Potato starch swells and turns gummy when overworked, and adding liquid gradually while beating helps the mash absorb it evenly and stay smooth rather than sticky or loose.
