Ingredients

Directions

Prepare

  1. Wash the rice thoroughly in two rinses, discarding the last rinse.

  2. Add the salt to the boiling water.

Cook and serve

  1. Pour in the rice and boil steadily for 30 minutes.

  2. To check if the rice is done, take out some grains and crush them between your fingers; they should mash easily and feel soft.

  3. Do not stir the rice to prevent it from sinking and burning.

  4. Serve with sugar and fresh or condensed milk, or with stewed fruits.

What each ingredient does

Rice
Its starch swells and softens as it cooks, giving the grains their tender texture.
Boiling water
Hydrates the starch and carries heat to cook the grains evenly through.

The step that matters

Do not stir the rice. Stirring breaks the grains and releases surface starch, which makes the rice gummy. Leaving it undisturbed lets the grains cook evenly without sticking or scorching on the bottom.
