What each ingredient does

Cucumbers
The main vegetable; its crisp, watery flesh gives the salad its body and crunch.
Vinegar
Adds sharp acidity that brightens the cucumber and seasons it as it sits.
Oil
Adds fat that carries flavour and gives the dressing a smooth, rounded mouthfeel.

The step that matters

Pressing out the liquid just before serving. Salt draws water out of the cucumber slices and they keep releasing it as they sit. Pressing out the vinegar and water before dressing keeps the salad crisp and stops the dressing from being diluted and watery.
