Plum Pudding

Ingredients

Directions

Make the mixture

  1. In a large bowl, combine raisins, currants, suet, citron, eggs, grated bread, brandy, syrup, sugar, and flour. Mix well until all ingredients are combined.

Wrap and boil

  1. Butter a cloth and dredge it with flour.

  2. Place the mixture in the center of the cloth and tie it securely, forming a ball.

  3. Boil the pudding in a pot of water for three hours, placing a plate under it to prevent burning.

Serve

  1. Carefully remove the pudding from the cloth while hot and serve with burning brandy and hard sauce.

What each ingredient does

Eggs
Bind the mixture and help give the cooked pudding its set structure.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Flour
Adds body to the mixture, helping it hold together while it boils.
Raisins
Add concentrated sweetness and chewy texture throughout the pudding.
Currants
Add concentrated sweetness and chewy texture throughout the pudding.
Sugar
Adds sweetness and contributes to the pudding's browning and flavour.

The step that matters

Tying the cloth. The cloth must be tied securely around a firmly packed ball so the pudding keeps its shape and water cannot seep into it during the long boil.

Swap the currant

How well each one fits the dish's main ingredients (raisin, egg, bread, brandy, syrup, sugar, flour):

  1. Vanillafits better
  2. Figfits better
  3. Apricotfits about as well
  4. Currantthe original
