Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the stewed apples, butter, grated bread, lemon rind, and lemon pieces.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Fold the egg whites into the apple mixture gently.

Bake and serve

  1. Pour the mixture into a baking dish and bake for about 30‑40 minutes until set.

  2. Serve warm, optionally topped with the meringue made from the reserved egg whites.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air that lifts the pudding and help it set.
Stewed apples
Provide moisture and the main soft, fruity body of the pudding.
Butter
Adds richness and moisture, giving a tender crumb.
Grated bread
Absorbs liquid and gives the mixture structure as it bakes.
Lemon rind
Adds aromatic oils and a bright, sharp flavour that balances sweetness.
Sugar
Adds sweetness to balance the tartness of the apples and lemon.

The step that matters

Folding the egg whites into the apple mixture gently. Whipped whites hold air bubbles that give the pudding lift. Vigorous stirring knocks that air out, so the pudding bakes denser and less light.

Swap the apple

How well each one fits the dish's main ingredients (egg, butter, bread, lemon, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raspberryfits about as well
  4. Applethe original

Fit is the average pairing score against egg, butter, bread, lemon, sugar. Candidates are from the same food group and used in at least 100 recipes.
