Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Combine the raised dough with powdered sugar, eggs, and butter or lard in a large bowl; mix well.

  2. Add the lemon essence and allow the dough to rise as for bread.

Shape and bake

  1. Roll out the risen dough to desired thickness and place it in two greased dripping pans.

  2. Let the dough rise again, then brush the top with melted butter.

  3. Sprinkle sugar and cinnamon over the top.

  4. Bake in a preheated oven at 350°F (175°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Add richness and help bind the dough, giving it a tender structure.
Butter or lard
Adds fat for tenderness and flavor in the enriched dough.
Powdered sugar
Sweetens the dough and helps browning in the oven.
Raised dough
Provides the yeast-risen base that gives the cake its light, bready crumb.

The step that matters

Let the dough rise again before baking. Yeast needs time to produce gas and expand the dough; if the second rise is cut short, the cake bakes dense rather than light and airy.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (sugar, egg, lemon, cinnamon):

  1. Vanillafits about as well
  2. Orangefits about as well
  3. Raisinthe original
  4. Blueberryfits about as well

Fit is the average pairing score against sugar, egg, lemon, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
