Why it works: Clove and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Raisin Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine chopped raisins, sugar, eggs, vinegar, syrup, water, flour, cloves, cinnamon, and baking soda. Mix until well combined.

Assemble the pie

  1. Grease a pie dish and line it with one pie crust.

  2. Pour the filling into the crust.

  3. Dot the filling with butter.

  4. Cover with the second pie crust and seal the edges.

  5. Cut slits in the top crust for steam to escape.

Bake

  1. Bake for 30-40 minutes or until the crust is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the filling and help it set as it bakes.
Flour
Thickens the filling so it holds its shape when cut.
Sugar
Adds sweetness and helps the filling brown at the edges.
Raisins
Provide the main body, chewiness and sweet fruit flavor.
Baking soda
Reacts with the acid in the vinegar and syrup, lightening the filling.
Vinegar
Adds sharp acidity that balances the sweetness of the syrup and sugar.

The step that matters

Cut steam slits in the top crust. Heated filling produces steam, and without vents the pressure can lift or split the top crust and push filling out the sides. Vents let steam escape so the crust stays intact.

Swap the clove

How well each one fits the dish's main ingredients (raisin, sugar, egg, vinegar, syrup, flour, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against raisin, sugar, egg, vinegar, syrup, flour, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
