Why it works: Molasses and sugar are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 9,225 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Ginger Snaps
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Make the dough
In a tin pan, combine molasses, brown sugar, lard, and ground ginger.
Boil until the mixture thickens slightly.
Gradually stir in a good handful of sifted flour.
Once heated well, add baking soda dissolved in a little tepid water and mix thoroughly.
Add enough flour to make a stiff dough.
Bake
Roll the dough very thin, cut into shapes, and bake in a 400°F (200°C) oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Molasses
- Adds dark color, moisture and the characteristic sweet, rich flavor of ginger snaps.
- Lard
- Provides fat that tenderizes the dough and gives a crisp texture.
- Flour
- Forms the structure of the dough so it can be rolled and cut into shapes.
- Baking soda
- Reacts with the acidic molasses to lighten the dough and help it spread and brown.
The step that matters
Adding the baking soda. Baking soda needs to be dissolved evenly and mixed thoroughly into the hot molasses mixture. Uneven mixing leaves pockets of soda that can cause bitter spots and uneven rising or browning.
Swap the ginger
How well each one fits the dish's main ingredients (molasses, sugar, flour):
- Cinnamonfits better
- Jalapenofits better
- Gingerthe original
- Nutmegfits about as well
Fit is the average pairing score against molasses, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
