Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Peeled and thinly slice the apples.

  3. In a 3‑pint baking dish, place a few small bits of butter.

Layer and assemble

  1. Layer the sliced apples and sugar, adding grated lemon rind if desired, and some bits of butter.

  2. Add a layer of thinly sliced buttered bread, followed by another layer of apples, then a second layer of bread, and a third layer of apples.

  3. If the apples are not very sour, squeeze the lemon into a cup, fill with cold water, and pour over the apples.

  4. Cover the apples with the remaining bread, either crumbed or grated, and dot with the rest of the butter.

Bake

  1. Bake covered for 1 hour, then uncover and bake for an additional hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the main body and tart flavour that softens into the filling.
Bread
Forms layers that soak up butter and juices and turn golden on top.
Butter
Adds richness and helps the bread brown as it bakes.
Sugar
Sweetens the apples and helps them caramelise slightly during baking.

The step that matters

Covering the dish while baking. Baking covered first traps steam so the apples cook through and soften; uncovering later lets the top dry and brown.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (bread, butter, sugar, apple):

  1. Figfits better
  2. Pearfits better
  3. Vanillafits better
  4. Lemonthe original

Fit is the average pairing score against bread, butter, sugar, apple. Candidates are from the same food group and used in at least 100 recipes.
