Make the gravy

  1. Remove the sweetbreads and place them in a small dripping pan with butter and flour.

  2. Brown the sweetbreads slightly, then add ¼ cup of milk and ¼ cup of water, seasoning with pepper.

  3. Heat ½ pint of cream and stir it into the gravy in the pan.

Serve

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Main protein; slow stewing keeps them tender and moist.
Salt pork
Larded fat that melts during cooking, adding moisture and savory flavor to the meat.
Butter
Fat that enriches the pan drippings and carries flavor into the gravy.
Flour
Thickens the pan juices with butter, giving the gravy body.
Cream
Adds richness and smoothness, softening the gravy's texture.

The step that matters

Brown the sweetbreads slightly before adding the milk and water. Browning creates flavorful Maillard compounds in the butter, flour and pan residue. Adding liquid too early would steam the surface and leave the gravy pale and flat.

Swap the peas

How well each one fits the dish's main ingredients (pork, butter, flour, milk, pepper, cream):

  1. Almondfits better
  2. Chestnutfits better
  3. Beansfits better
  4. Peasthe original

Fit is the average pairing score against pork, butter, flour, milk, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
