Ingredients

Directions

Prepare the sweetbreads

  1. Using a larding needle, insert small strips of salt pork into the sweetbreads, letting them project about ½ inch.

  2. Place the sweetbreads in a pot with ½ cup of water and stew slowly for 30 minutes.

Make the gravy

  1. Remove the sweetbreads and place them in a small baking dish with butter and flour; brown slightly.

  2. Add ⅓ cup of milk and ⅓ cup of water, and season with pepper.

  3. Heat ½ pint of cream and stir it into the gravy in the pan.

Serve

  1. Arrange the sweetbreads in the center of a serving dish, pour the gravy over them, and surround with seasoned boiled peas.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Form the main body of the dish, becoming tender when stewed slowly.
Salt pork
Adds fat and savory flavor as it melts into the sweetbreads during stewing.
Butter
Provides fat and richness, and helps the flour brown slightly.
Flour
Thickens the gravy as it cooks with the butter and liquids.
Cream
Enriches the gravy, adding richness and a smooth, silky texture.

The step that matters

Stew the sweetbreads slowly. Slow, gentle stewing keeps the delicate sweetbreads tender and moist; rushing with high heat can toughen the proteins and dry them out.

Swap the peas

How well each one fits the dish's main ingredients (pork, butter, flour, milk, pepper, cream):

  1. Almondfits better
  2. Chestnutfits better
  3. Beansfits better
  4. Peasthe original

Fit is the average pairing score against pork, butter, flour, milk, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
