The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemon juice
Provides the sharp acidity that defines the flavor of the ice.
Sugar
Sweetens the mixture and softens the texture by lowering the freezing point.
Lemon rind
Steeped in water to extract aromatic oils that flavor the base.
Egg whites
Whipped to a stiff froth, they add airy lightness to the partially frozen mixture.

The step that matters

Folding in the beaten egg whites. Egg whites must be beaten to a stiff froth and folded gently into the partly frozen mixture. Overmixing knocks out the air, and adding them to a fully liquid base lets the foam collapse, leaving a denser ice.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
