Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds dark color, moisture and a deep sweet flavor to the gingerbread.
Eggs
Add structure and help bind the batter as it sets in the oven.
Baking soda
Reacts with the molasses and milk to produce gas that lifts the batter.
Butter
Adds fat for tenderness and a rich, soft crumb.
Flour
Provides the structure that sets the batter into a cake-like crumb.

The step that matters

Adding the flour gradually. Flour develops gluten when mixed, so adding it gradually and stopping at the desired consistency keeps the crumb soft rather than tough and dense.

Swap the ginger
