Why it works: Asparagus and peas match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 808 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Scollops of Fillets of Beef

Ingredients

Directions

  1. Boil water in a small stew-pan until it reaches a quarter up the mould.

  2. Add cream if the mixture is too firm, aiming for a delicate but compact body.

  3. Season with coarse sea salt and cayenne pepper.

  4. Grease dariole moulds with salad oil and drain them.

  5. Fill the moulds with the veal mixture, leaving some space at the top.

  6. Cut rounds of paper and place them at the bottom of a stew-pan.

  7. Pour in 1 pint of water and place the dariole moulds on top.

  8. Cover with another round of paper and simmer gently for 15 minutes.

  9. Serve each dariole with asparagus peas in the center and mask with Béchamel sauce.
