Croustades for the a LA Reine Soup

Ingredients

Directions

  1. Cut the day-old bread into small square dice, about ⅛ inch each.

  2. Heat clarified butter in a sauté pan and fry the bread cubes until light brown, stirring with a perforated spoon for even cooking.

  3. Remove the fried bread and drain on a sieve.

  4. Mix the salad oil, malt vinegar, mixed pepper, salt, and sugar in a bowl and beat well.

  5. In a serving dish, place a pile of shredded lettuce and cut-up beetroot in the center.

  6. Arrange the scollops of trout on top, leaning them against each other.

  7. Pour the dressing over the salad and place a pile of Tartare sauce in the center.

  8. Sprinkle chopped aspic over the trout and keep the dish on ice until serving.
