Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Cook the rice

  1. Boil 1 ¼ cups of rice in a large pot of water with ¼ teaspoon of salt and the juice of 2 lemons until tender, keeping the grains whole.

  2. Drain the rice and let it cool on a large plate.

Make the punch gelatin

  1. In a saucepan, combine 5 to 6 tablespoons of apricot marmalade with ⅓ cup of punch syrup and the juice of 1 orange.

  2. Add 8 to 10 sheets of clarified gelatin and stir until dissolved.

  3. Chill the mixture over ice until it thickens, then fold in the rice, chopped pistachios, and diced pineapple.

Set and serve

  1. After 2 minutes, pour the mixture into a mold surrounded by crushed ice.

  2. After 1 hour, unmold the dessert onto a plate and cover the bottom with chilled sweetened strawberry puree.

What each ingredient does

Rice
Provides the body of the dessert, with cooked grains giving bite within the set gelatin.
Clarified gelatin
Sets the liquid mixture so it holds its shape when unmolded.
Apricot marmalade
Adds sweetness, fruit flavour and body to the punch base.
Punch syrup
Supplies the main sweet, flavoured liquid that the gelatin sets.
Pistachios
Add crunch and nutty flavour against the soft set texture.
Diced pineapple
Adds juicy texture and acidity that brightens the sweet base.

The step that matters

Chill the mixture until it thickens before folding in the rice. Gelatin must be partly set but still fluid. If the mixture is too cold it clumps and the rice, pistachios and pineapple will not distribute evenly, and if too warm they will sink and the dessert will not hold its shape when unmolded.

Swap the pistachio

How well each one fits the dish's main ingredients (rice, lemon, apricot, syrup, orange, gelatin, pineapple):

  1. Almondfits about as well

  3. Chestnutfits about as well
  4. Beansfits less well

Fit is the average pairing score against rice, lemon, apricot, syrup, orange, gelatin, pineapple. Candidates are from the same food group and used in at least 100 recipes.
