Lemon Pie

Ingredients

Directions

The book says “a cool oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. Pour hot water over the bread crumbs.

  2. Add salt, sugar, lemon juice, and beaten egg yolk to the mixture. Mix well.

  3. Pour the mixture into a pie crust.

  4. Bake at 350°F (175°C) until set.

Make the meringue and finish

  1. Beat the egg whites until stiff.

  2. Gradually add 2 tablespoons of sugar to the egg whites.

  3. Pipe the meringue over the top of the cooled pie.

  4. Brown the meringue in a 300°F (150°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the hot water and thicken the filling into a soft body.
Egg yolk
Adds richness and helps set the filling when baked.
Egg whites
Whipped into a stiff foam that forms the meringue topping.
Sugar
Sweetens the filling and helps the whipped egg whites hold their shape.
Lemon juice
Adds acidity and sharp lemon flavor to the filling.

The step that matters

Beat the egg whites until stiff. Egg whites need to be beaten to a stiff foam before sugar is added gradually, so the meringue holds its shape and browns evenly instead of weeping or collapsing.
