Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main meat, which becomes tender through long, slow simmering.
Butter
Adds fat for browning the duck and bacon and carries flavour through the stew.
Streaky bacon
Renders fat and savoury flavour into the butter for browning the duck.
All-purpose flour
Browns in the fat and thickens the cooking liquid into a sauce.
Small onions
Soften during simmering and add sweetness to the sauce.
Peas
Add sweet, fresh flavour and colour to the finished dish.

The step that matters

Sprinkle the flour over the duck and stir well. Flour must be stirred into the hot fat so it cooks and does not form lumps. Cooking it briefly in the fat removes raw starch taste and lets it thicken the sauce evenly when the water is added.

Swap the peas

How well each one fits the dish's main ingredients (butter, flour, onion, parsley, clove, pepper):

  1. Chickpeafits better
  2. Black-eyed peafits better
  3. Lentilsfits better
  4. Peasthe original

Fit is the average pairing score against butter, flour, onion, parsley, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
