Another Wat to Stew Duck

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the duck

  1. Preheat your oven to 400°F (200°C).

  2. Stuff the duck with pepper, salt, minced onion, and minced sage.

  3. Roast the duck halfway.

Stew

  1. In a pan, melt the butter and brown the flour.

  2. Add enough weak stock or water to half cover the duck, along with more pepper and salt.

  3. Place the duck in the pan and add the green peas.

  4. Let it stew for 30 minutes, stirring occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Duck
Provides the main protein and rich fat that flavours the stew as it cooks.
Butter
Adds fat and richness, and carries flavour when it browns with the flour.
Flour
Browned in the butter, it thickens the stock into a gravy-like sauce.
Green peas
Add sweetness and soft, tender body to the stew as they cook in the liquid.

The step that matters

Brown the flour in the butter. Flour browns quickly once the butter is hot, and burnt flour turns bitter and dark. Stirring constantly and watching the colour gives a nutty flavour and lets the flour thicken the stock smoothly.

Swap the peas

How well each one fits the dish's main ingredients (pepper, onion, sage, butter, flour):

  1. Chestnutfits better
  2. Beansfits better
  3. Lentilsfits better
  4. Peasthe original

Fit is the average pairing score against pepper, onion, sage, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
