Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and brown sugar until smooth.

  3. Add the cold coffee and eggs, mixing well.

  4. In another bowl, combine the flour, baking soda, cinnamon, cloves, and nutmeg.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that tenderises the crumb and carries flavour.
Brown sugar
Adds sweetness, moisture and a deeper caramel flavour.
Cold coffee
Supplies the liquid that hydrates the flour and adds a roasted aroma.
Eggs
Bind the batter and set during baking to give the cake structure.
Flour
Forms the gluten network and sets the cake's overall structure.
Baking soda
Acts as a leavener, producing gas that helps the cake rise.

The step that matters

Gradually add the dry ingredients and stir until just combined. Once flour meets liquid, gluten begins to form. Overmixing develops too much gluten, which makes the cake tough and dense rather than tender.

Swap the clove

How well each one fits the dish's main ingredients (butter, sugar, coffee, egg, flour, cinnamon, nutmeg):

  1. Cardamomfits better
  2. Allspicefits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against butter, sugar, coffee, egg, flour, cinnamon, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
