Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the pudding sets.
Flour
Thickens the milk and helps give the pudding body.
White bread
Soaks up the milk and gives the pudding a soft, tender crumb.
Kidney fat
Adds richness and moistness to the pudding.
Raisins
Add sweetness and chewy texture.
Currants
Add sweetness and chewy texture.

The step that matters

Boiling the pudding for the full time. The mold must be cooked long enough for the eggs and flour to set through the center. Cutting the boil short can leave the pudding wet and loose inside.

Swap the currant

How well each one fits the dish's main ingredients (egg, flour, milk, bread, raisin):

  1. Vanillafits better
  2. Figfits better
  3. Datesfits better
  4. Currantthe original

Fit is the average pairing score against egg, flour, milk, bread, raisin. Candidates are from the same food group and used in at least 100 recipes.
