Apple Dumplings

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dumplings

  1. Make a rich biscuit dough and roll it out thin.

  2. Cut the dough into squares and fill each with thinly sliced apples.

  3. Add sugar, a little butter, nutmeg, and lemon juice to the apples.

  4. Fold the dough over the filling to seal it.

Bake and serve

  1. Place the dumplings closely together in a baking pan.

  2. Pour the sauce made from butter, sugar, and boiling water over the dumplings.

  3. Bake at 400°F (200°C) for about 20 minutes, basting frequently with the sauce.

  4. If the sauce is insufficient, add more as needed and serve with sauce poured over.

What each ingredient does

Apples
Provide the main filling and, as they soften, a tender fruity body.
Butter
Adds richness and fat to the sauce, helping it cook into a glossy, flavourful syrup.
Sugar
Sweetens the filling and sauce and helps the syrup caramelise and brown in the oven.
Rich biscuit dough
Forms the tender, flaky wrapper that encloses the filling and absorbs the sauce.

The step that matters

Basting with the sauce during baking. Basting keeps the dough surfaces moist and helps the sugar syrup thicken and glaze rather than dry out. Checking the sauce level and adding more as needed keeps the dumplings from drying or scorching in the pan.
