Soft Gingerbread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter until smooth.

  3. Dissolve the baking soda in the salt. Add the mixture to the butter.

  4. Stir in the molasses and water until well combined. Add the ginger. Mix until stiff.

Bake

  1. Pour the batter into a square baking tin.

  2. Bake for about 30-35 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Baking soda
Reacts with the molasses acid to lift and lighten the crumb.
Butter
Adds fat that tenderizes the crumb and carries flavor.
Molasses
Provides sweetness, dark color, and moisture to the batter.
Water
Thins the batter and adds moisture for a softer texture.

The step that matters

Dissolve the baking soda in the salt. Baking soda must be fully dissolved and mixed through the batter so it reacts evenly with the molasses acid. Uneven pockets can cause bitter spots or uneven rising.

Swap the ginger

How well each one fits the dish's main ingredients (butter, molasses):

  1. Cinnamonfits better
  2. Clovefits about as well
  3. Nutmegfits about as well
  4. Gingerthe original

Fit is the average pairing score against butter, molasses. Candidates are from the same food group and used in at least 100 recipes.
