Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the dough and whites lighten it, helping the fritters puff when fried.
All-purpose flour
Forms the soft paste that gives the fritters their body once fried.
Lard
Hot fat cooks the dough quickly, causing it to puff and brown on the outside.
Powdered sugar
Sweetens the dough and dissolves smoothly into the yolks for a fine texture.
Cream
Adds moisture and richness to the dough, softening its texture.

The step that matters

Frying the circles in hot lard. If the fat is not hot enough, the dough absorbs oil and turns greasy instead of puffing. Too hot and the outside browns before the centre cooks through.
