Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Spice Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the brown sugar and butter until smooth.

  3. Add the sour milk and eggs, mixing well.

Make the batter

  1. In another bowl, combine the flour, baking soda, cloves, allspice, cinnamon, and nutmeg.

  2. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  3. Fold in the raisins, chopped almonds, currants, and citron if using.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cake together as it bakes.
Eggs
Bind the batter and add structure and richness to the crumb.
Butter
Adds fat for a tender texture and rich flavour.
Brown sugar
Adds sweetness, moisture and a molasses-like depth of flavour.
Sour milk
Its acidity reacts with baking soda to help the cake rise and adds moisture.
Baking soda
Reacts with the acidic sour milk to produce gas that lifts the batter.

The step that matters

Stir the dry ingredients in gently. Once flour meets liquid, gluten begins to form. Stirring only until combined keeps the crumb tender rather than tough and dense.

Swap the currant

How well each one fits the dish's main ingredients (sugar, milk, butter, flour, raisin, almond, egg):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Currantthe original

Fit is the average pairing score against sugar, milk, butter, flour, raisin, almond, egg. Candidates are from the same food group and used in at least 100 recipes.
