Why it works: Ginger and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,380 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Hard Gingerbread
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Mix all ingredients until the dough is firm enough to roll out like biscuit dough.
Roll the dough to about ½ inch thick and cut into small biscuit shapes.
Alternatively, bake the dough in a sheet or on a biscuit tin.
Cut slits about ¼ inch deep across the top of the dough.
Bake in a moderate oven at 350°F (175°C) until done.
While hot, rub the top with molasses and let it dry.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
