Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raised dough
Provides the leavened base that gives the cake its yeasted, airy structure.
Eggs
Add structure and richness, and the whipped whites help lighten the batter.
Butter
Adds fat for tenderness and a rich, smooth crumb.
Sugar
Sweetens the cake and helps create a tender texture when creamed with butter.
Baking soda
Reacts with the batter to produce gas that helps the cake rise.

The step that matters

Beat the mixture hard for several minutes. Vigorous beating incorporates air and develops the batter's structure before baking. Too little beating leaves a dense cake, while the folded egg whites must stay airy to support rise.

Swap the raisin

How well each one fits the dish's main ingredients (butter, sugar, egg, milk, nutmeg, cinnamon, clove):

  1. Vanillafits better
  2. Figfits about as well
  3. Raisinthe original
  4. Lemonfits about as well

Fit is the average pairing score against butter, sugar, egg, milk, nutmeg, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
