Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Soak the stale bread in the milk over low heat until smooth and hot.

  2. Remove from heat and stir in the egg yolks, butter, ordinary cheese, Parmesan or sapsago, salt, and red pepper.

Bake

  1. Fold in the beaten egg whites gently.

  2. Fill small paper cases or individual moulds with the mixture.

  3. Bake in a 400°F (200°C) oven for 5 to 6 minutes.

What each ingredient does

Stale bread
Forms the body of the mixture and soaks up milk to give a soft, custard-like crumb.
Egg yolks
Add richness and help the mixture set as it bakes.
Egg whites
Whipped and folded in, they trap air so the ramekins rise and turn light.
Butter
Adds fat for a tender texture and rich flavour.
Parmesan or sapsago cheese
Adds sharp, savoury flavour and a little browning on the surface.
Ordinary cheese
Adds milder cheese flavour and moisture to the mixture.

The step that matters

Fold in the beaten egg whites gently. Egg whites hold air only while they are whipped. Vigorous stirring knocks that air out, so the ramekins bake flat and dense instead of rising light.
