What each ingredient does

Lamb's sweetbreads
Provide the tender, delicate meat that forms the main body of the dish.
Well-reduced stock
Cooks the sweetbreads with concentrated flavour and forms the glaze that coats them.
Cream
Enriches the glaze, adding richness and a smooth, silky texture.

The step that matters

Blanching and cooling the sweetbreads. Blanching firms the sweetbreads and removes impurities so they dice cleanly. Cutting them only when fully cold keeps them from crumbling and losing their shape.

Swap the peas

How well each one fits the dish's main ingredients (lamb, cream):

  1. Almondfits better
  2. Pistachiofits better
  3. Beansfits better
  4. Peasthe original

Fit is the average pairing score against lamb, cream. Candidates are from the same food group and used in at least 100 recipes.
