What each ingredient does

Butter
Melts with the peas to add richness and carry the seasoning.
Sugar
Adds a touch of sweetness that balances the salt and pepper.
Peas
Form the main vegetable, cooking to tenderness in their own steam and added water.

The step that matters

Adding water and controlling the heat. Peas can scorch on the bottom of the pan once the water cooks off. Adding water as needed and cooking slowly keeps them from burning while they become tender.

Swap the white pepper

How well each one fits the dish's main ingredients (lamb, parsley, butter, sugar, peas):

  1. Cinnamonfits better
  2. Mintfits better
  3. Thymefits better
  4. White pepperthe original
