Lemon Custard

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter and sugar together.

  3. Add the grated lemon rind, lemon juice, cornstarch, and beaten egg yolks to the mixture.

  4. Stir in the boiling water just before adding to the pastry.

  5. In another bowl, beat the egg whites until stiff peaks form.

  6. Gradually add the sugar and lemon juice to the egg whites, continuing to beat until glossy.

  7. Spread the meringue over the custard filling before baking.
