Rich Fruit Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Dredge currants and raisins with ½ cup of flour.

  2. Mix the spices with the remaining flour.

  3. Beat the butter to a cream, then gradually beat in the sugar.

  4. Add the brandy a little at a time, beating until smooth and creamy.

  5. Add the almonds and beat well.

  6. Incorporate the well-beaten yolks of the eggs, then the whites.

  7. Stir in the flour lightly, then fold in the raisins and currants.

  8. Spread the cake mixture in layers in the pans, adding thin slices of citron on each layer.

  9. Bake for four hours at 350°F (175°C).
